White Penoy is a sweet, mild Chinese tea made from unopened tea buds, as well as the two newest leaves to sprout. The freshly harvested leaf is allowed to wither dry in the sun. The natural oxidation that takes place during this withering gives White Peony beautiful, plush flavours.
Dry Leaf: Green whole leaf with stems
Aroma: Aroma of almonds, hints of spring
Colour of Liquor: The liquor is golden and bright
Flavour of the Tea: The flavour is clean and brisk
Compliments: Because of the extremely subtle flavour of white teas, we recommend pairing them with only the mildest of flavours.
Brewing Instructions: Always use fresh water. Bring water to near boiling point. Take one teaspoon of tea leaves in a cup. Pour the heated water and steep the tea for 4 mins. Adjust the time of brewing as per desired strength. Leaves can be steeped multiple times till it gives flavour.
Tea Master Recommendation: Not to be had with milk. Always use fresh water. Do not use re-boiled water. The brewed leaves can be steeped multiple times with an increase in steeping time. Sip it when it cools down a little instead of boiling hot for enhanced flavour.
About the Garden: The White Penoy has been sourced from Fuding and Zhenghe cities in Fujian province which is the best tea producing regions of China.
